The Method
PREHEAT
Preheat the air fryer to 400F (205C) for 3 minutes.
Cold basket: Starting in a cold basket will cause the salmon to steam rather than sear, leading to mushy texture.
Air fryer is preheated and hot.
TOSS
Toss salmon with olive oil (1 tbsp), salt, pepper, and garlic powder (1 tsp) (if using).
Excess oil pooling: Excess oil at the bottom of the bowl creates steam instead of a crust. Drain excess before transferring to air fryer.

ROAST
Time-sensitiveAir fry 6 minutes, shake, then cook 2-4 minutes more until edges are browned and centers still glossy.
Overcooking: Salmon continues to cook after leaving the air fryer; pull early to avoid dry, chalky texture.

Squeeze lemon over the salmon bites and toss. Taste and adjust salt.
