Traditional shawarma uses a vertical rotisserie where the meat self-bastes as it rotates. At home, we compensate by using dark meat (thighs) and a yogurt marinade. The yogurt's acid and enzymes break down the muscle fibers, allowing us to roast at high heat without drying out the meat.
The Technique
Yogurt contains lactic acid (pH ~4.5) and calcium. The acid denatures surface proteins, allowing calcium ions to penetrate deeper into the muscle tissue. Calcium activates enzymes (calpains) that break down protein structures, tenderizing the meat. This chemical tenderization allows the meat to withstand high heat without becoming tough. The milk solids in yogurt (lactose and proteins) caramelize during roasting, creating complex Maillard flavors.
