The Method
PREP
Trim okra (450 g) stems. Slice pods in half lengthwise if large, or leave whole if small. Pat dry.
Slime factor: Excess moisture causes the okra to release mucilage, which turns the breading soggy during frying.
Okra is trimmed, sliced if necessary, and patted dry.
COAT
In a bowl, combine cornmeal (½ cups), rice flour (¼ cups), salt, pepper, garlic powder (½ tsp)garlic powder (½ tsp), and cayenne (¼ tsp)cayenne (½ tsp). Toss okra (450 g) in mixture until evenly coated.
Clumping: Excess moisture causes the flour to turn into a thick paste rather than a light coating.
Okra is evenly coated with the cornmeal and rice flour mixture.
AIR FRY
Preheat air fryer to 400°F (200°C). Lightly oil basket. Arrange okra (450 g) in single layer. Cook 12-15 minutes, shaking halfway.
Soggy coating: Overlapping okra pieces will steam instead of fry, resulting in a gummy texture.
Okra is golden brown and crispy, cooked through.
DUST
While hot, transfer to bowl. Sprinkle with Creole Ranch Dust and toss gently.
Soggy coating: Applying the dust too late after removing from heat prevents the seasoning from adhering properly.

SERVE
Serve immediately with Creole Ranch Dip.
