Chef's Notes
Spicy version: add 0.5 tsp red pepper flakes with the seasoning. Savory version: add 1 tsp Dijon to the oil before tossing.

The Method
PREHEAT
Preheat the air fryer to 400F (205C) for 3 minutes.
Cold basket: Starting with a cold basket will steam the broccoli, resulting in mushy, pale florets instead of crispy edges.

DRY
Prep aheadIf broccoli (1½ lb) was washed, dry it very well with a towel. Moisture on the florets will steam them.
Residual moisture: Even hidden water in the crevices will cause the broccoli to steam rather than crisp.
Florets feel dry to the touch
TOSS
Toss broccoli (1½ lb) with olive oil (1½ tbsp), salt, pepper, and garlic powder (½ tsp) (if using).
Excess oil: Too much oil pools in the crevices, leading to soggy, heavy florets instead of crispy edges.

ROAST
Air fry 8 minutes, shake, then cook 3-5 minutes more until tips are browned and stems are tender.
Steaming instead of roasting: Overloading the basket traps moisture, resulting in soggy, limp broccoli rather than crispy edges.

FINISH
Squeeze lemon (1 whole) over the broccoli (1½ lb) and toss. Taste and add a pinch more salt if needed.
Soggy broccoli: Do not over-squeeze the lemon; too much liquid will soften the crispy exterior you just achieved.
