The Method
HEAT
Oven to 425°F / 218°C.
Uneven cooking: Loading the pan before the oven reaches full temperature will result in a soggy crust.
Oven is fully preheated.
BUILD THE BASE
Lightly oil sheet pan (or parchment). Lay tortillas overlapping to cover the pan and form a "tortilla floor," with edges hanging over slightly.
Filling leakage: Gaps in the tortilla base will cause cheese and filling to burn onto the pan.

FILL
Scatter half the cheese. Add chicken/beans, salsa, spices, then remaining cheese.
Leakage risk: Overstuffing the center will cause the quesadilla to burst; keep the filling height consistent across the entire pan.

TOP + SEAL
Add tortillas on top to cover fillings. Fold over the hanging tortilla edges to seal like a blanket.

PRESS + BAKE
Put another sheet pan on top (or a heavy oven-safe skillet) to press. Bake 12 minutes.

CRISP
Remove the top weight/pan. Bake 6-10 minutes more until deeply golden.
