The Method
SEASON
Salt and pepper chicken. Lightly dredge in flour (2 tbsp) if using.

SEAR
Oil in skillet, medium-high. Sear 3-4 minutes per side. Remove.
Sticking chicken: If the chicken resists when you try to flip it, it is not ready; wait another 30 seconds.

AROMATICS
Lower heat. Add butter (2 tbsp) + garlic 30 seconds. Add sun-dried tomatoes (1 cup).
Burnt garlic: Garlic browns rapidly; if it turns dark brown, it will taste bitter and ruin the sauce base.
Garlic is fragrant and sun-dried tomatoes are heated through.
SAUCE
Add stock + cream + seasoning. Simmer 3-5 minutes.
Sauce breaking: Using high heat can cause the cream to separate or curdle. Maintain a gentle simmer.
Sauce has simmered and slightly thickened.
CHEESE
Off heat, stir in Parmesan (1 cup) until smooth.
Grainy sauce: Adding cheese while the pan is on high heat can cause the proteins to seize and the sauce to break.
Parmesan is fully melted and the sauce is smooth.
FINISH COOK
Return chicken to sauce and simmer 3-6 minutes until done.
Overcooking: Simmering too long will cause the chicken to turn dry and rubbery.
Chicken is cooked through and coated in sauce.
HERBS + SERVE
Add basil/parsley. Serve over pasta, rice, or mashed potatoes.
